The filling, oh the filling. Just like Brown Eyed Baker promised, it tastes just like the Reese's filling. The most important thing you must remember. Use light brown sugar. I only had dark, which is difficult to dissolve, so my filling tasted great but was a little grainy.
Home made peanut butter is nice, but not necessary.
First melt the butter in a small pot, then add the sugar, then the peanut butter.
When the liquid starts to boil, take the pot off of the heat, add the sugar, and stir everything together.
You'll end up with a filling that looks like this. Put the filling into the fridge and let it cool for 30 minutes. Then take it out and roll the peanut butter into balls and lightly press them down into discs.
Melt the chocolate in the microwave and then stir in the coconut oil.
Take the coconut oil chocolate and put a small layer of chocolate into the bottom of each cup and pop the pan into the freezer for ten minutes. Then take out the pan, put a peanut butter ball into each cup, and cover with chocolate. Pop the pan into the fridge for 30 minutes, and then enjoy.
The filling is really good, just like in Reese's peanut butter cups. A lot of work goes into this recipe, but the recipe makes a lot of cups and these peanut butter cups freeze really well.
